Spring recipe | Red Cabbage Slaw

Crisp cabbage, a part of the Brassica family - This group of vegetable
supports liver health through aiding toxin and hormone clearance. Red
cabbage in particular with its vibrant red colouring is super rich in vitamin C,
fibre and vitamin K which collaborate to reduce inflammation; to boost your
immunity and reduce the risk/or related symptoms of varying imbalances and
disease/illness states, making this nutrient dense crunch the perfect essential to all your spring dishes.
Red cabbage & green apple seed slaw
Prep 30 mins | Serves 6 as a side compliment
½ small red cabbage shredded fine
1 bunch of watercress, washed and dried
2 medium carrots, peeled and slightly shredded
2 green onions (shallots), trimmed and thinly sliced
1 Granny Smith apple, cored and thinly sliced
1 Tbs lemon juice
½ mixed seeds (toasted if you like)
Lemon yoghurt dressing
½ cup full fat Greek or Natural yoghurt
1 Tbs lemon juice
1 Tsp Dijon mustard
Step 1: Combine watercress, cabbage, carrots and green onions in a large
bowl. Toss the apple in lemon juice, add watercress & toss gently to combine
Step 2: To make dressing, combine all ingredients in a jar with salt and
pepper to season, shake until well combined. Drizzle dressing over salad, sprinkle with seeds and toss to combine.
